On Friday, I was planning to make a batch of Coconut Macaroons for my friend’s holiday party, but realized at the last minute I was out coconut. It’s hard to make a macaroon without it. Half the day was already gone and I didn’t want to run out to the store, so it was time to rework my dessert. Johanna was hosting a cocktail party, and I thought it might be fun to have a cocktail inspired dessert. Bottles of Triple Sec, Crème de Cacao and Kahlua were already in the liquor cabinet. I revamped my favorite buttercream recipe to include the liqueurs and used it to fill chocolate Whoopie Pies. Your standard Whoopie Pie is basically a chocolate cake sandwich with sweet, sticky marshmallow cream – kids love the sugar shock that you get from eating one. Between the cream cheese I added to cut the sweetness and the liqueurs, this version was a definitely an adult treat.
