Sunday - Light and Flaky Chicken Pot Pie, Raw Kale Salad with Lemon and Apple
Monday - White Bean Soup with Ham, Bread from French Market
This delicious soup recipe will be posted on Tuesday. I made it in the morning and was surprised that it took just about 90 minutes to come together. Later that day, we took the kids down to the French Market for lunch. So much good food. We left with a loaf of bread to enjoy with dinner.
Tuesday - Tortellini and Sauce; Salad
Wednesday - Crispy Chicken, Regular and Sweet Potatoes, Roasted Cauliflower
"Crispy chicken" is one of my younger kids favorite meals. My little one begs for it weekly. I coat chicken tenders in seasoned flour, then egg, then a combination of panko, whole wheat bread crumbs and some grated parmesan cheese. Fry for a few minutes in hot oil and serve with ketchup (of course) or a dipping sauce made from orange marmalade and horseradish. The prep is a little messy,, but the meal is always a hit. I usually buy boneless skinless chicken breasts in the three pound package and freeze in smaller portions. Before freezing, I remove the tender from the back of the chicken breast and use that for "crispy chicken".
Thursday - Leftovers for Adults; Mac and cheese for the kids
Our son and Daddy went to see the Chicago Children's Theater Play "Bud not Buddy", so the kids at home had an easy dinner.
Friday - Homemade Cheese Pizza
Saturday - Oven Roasted Salmon for the kids; Dinner with fiiends for mom and dad
For the past twelve years, Bob and I have been part of a dinner group in our neighborhood. The hostess plans the menu and gives each couple a dish to bring. It is such a nice way to entertain and try new dishes. Last night, Bob and I had dinner with college friends in Oak Park and used my Gastropub Menu from our neighborhood dinner group. I prepared the appetizer (baked oysters with leeks and bacon) and dessert (sticky toffee pudding). Charlene made a Brussels sprout salad with burrata cheese. Our host, Molly, served slow grilled rack of lamb with mustard, herbs and caramelized onion jam. Petee made the side dish - a delicious root vegetable gratin.
