This was last week's menu at our house:
Sunday: Pot Roast, Gemilli Pasta, Broccoli
Monday: Chicken Wrapped in Proscuitto, Whole Wheat Noodles with Green Olive Tapanade and Sun Dried Tomatoes, Salad
This was a big hit with three of the kids. I chopped up the extra chicken and used it for a spinach, apple and dried cherry salad. Perfect lunch for my high schooler.
Tuesday: Cheese Burgers, Sweet Potato and Regular Fries
Simple, but delicious. I bought the meat at Whole Foods when it was on a really good sale and froze it. My son came home after dodgeball and basketball practices and declared "I'll take two". He's eight years old...but ate a regular sized burger and two mini ones. It was the perfect meal for a hungry boy.
Wednesday: Buttermilk Waffles, Applewood Smoked Bacon and Fruit
Bob was out of town, which is always an excuse for us to have breakfast for dinner. I used one cup of whole wheat flour in the waffles instead of making them with two cups of white flour. The photos are gorgeous and it made me want to try the sous vide process on an egg.
Thursday: Leftovers for the Adults; Mac and Cheese for the kids
Friday: Cheese Pizza for Kids, Proscuitto, Pear and Arugula Pizza
I topped this week's pizza with some mozzarella, goat cheese, thinly sliced pear, sliced proscuitto and lots of freshly ground black pepper. Once the pizza came out of the oven, I lightly dressed some arugula with extra virgin olive oil, lemon juice, salt and pepper, then sprinkled the salad over the top of the pizza. It was more of an appetizer pizza, but still delicious.
Saturday: Mussels with White Wine, Baguette, St. Andre
This meal was selected by my daughter in preparation for our summer trip to France. We used a recipe from The Paris Cookbook by Patricia Wells. My oldest like the mussels; we'll try them a few more times before we go to try to convert the other kids. As expected the baquette was a hit with everyone.
