Sunday - Grilled Salmon, Whole Wheat Couscous, Green Beans
Our oldest had her high school band concert (which was fabulous, by the way), so we didn't get home until after 5pm and needed a quick dinner for a hungry group. I rubbed a 1 1/2 pound piece of salmon with extra virgin olive oil, sprinkled it with salt and pepper, then grilled it for about 18 minutes on medium heat. I mixed about a tablespoon each of orange marmalade and dijon mustard, then used it to glaze half the fish during the last 2 minutes of cooking. Whole wheat couscous is a high fiber, easy side dish and only takes about 10 minutes to cook; I mixed some of it with diced yellow pepper and halved tomatoes, for the more adventurous eaters in our family (the same ones who enjoyed the glazed salmon). Dinner was on the table about 30 minutes after we got home.
Monday - Ground Beef Tacos, Refried Black Beans, Rice.
Bob and Madeleine will be home late, so I wanted a meal that would reheat easily.
Tuesday - Mini Cheese Burgers, Sweet Potato Fries, Raw Kale Salad
Wednesday - Oven Roasted Chicken Legs, Cranberry Sauce, French Fries
Thursday - Crispy Chicken Fingers, Fries, Green Beans
Friday - Homemade Cheese Pizza
